Smokey Meatloaf Recipe

This is my go-to meatloaf recipe. We once sat at restaurant and they had a smokey meatloaf that was amazing.

On Pound of Ground Beef (I like 80/20 for this recipe)
Two Eggs
Oatmeal (one cup, ground)
One Teaspoon Liquid Smoke
One Onion, finely minced
One half cup Pasta Sauce ( I enjoy Classico Garlic and Herb)
Garlic Powder

Topping:
Sweet Baby Ray’s or Select Brand Hickory BBQ Sauce.

I put all the ingredients together and let them get to room temperature in a muffin tin. Pro-tip, a muffin tin will give you perfect portion sizes. Once the meat is room temp, I put it into the oven at 350* for about twenty minutes. At the twenty minute mark, I pull the meatloaf out and put BBQ sauce on top and let it go for another ten or fifteen minutes. It should have a decent crust on the top.

I like to serve this with Mashed Potatoes and Salad.
